Zun writes some stuff about them:

Danmaku is more of a game. Combatants intentionally do not make the strongest attacks with no gaps.

I've always thought of it as both combatants fighting like bosses. Gameplay requires the player to have the fast weapon, or for the fighting games to have melee attacks or walking on the ground.

Zun never really worked out the deal with knives and swords. I recall him jokingly saying "yeah, that is pretty strange... hmmm". I don't think he's that concerned because he doesn't take the continuity of the details that seriously. He wanted to make a knife wielding maid at some point, and at another he decided that the spell duels were a competition rather than a death match.

Maybe you can make anything into danmaku. See how Sakuya's knifes are glowing? Maybe you can cast some spell that will change anything into danmaku. Same with Nitori and her cumbers.

Bullets that represent physical objects are called Fractal-type danmaku. These are not literal physical objects; they're simple danmaku like everything else that are molded into a shape. Stars, kunai, knives, yin-yang orbs, amulets, etc.
