As for breakbeats, you can download a lot of Amen Break samples from the web, and just put those under your music.
for example, here: http://rhythm-lab.com/amen_breaks
you can also find the basic amen break samples, cut them up into 8 sections and swap/repeat those parts.
I would advise you to first try to imitate rhythms in your favourite breakbeat songs this way. After that, you can try creating your own rhythms

I use Music Maker 15, and occasionally also Reaper for sample-heavy music and mastering.
Perfect Score was made in Ableton though.

I like this, really nice to listen to. While it's undeniably touhou, there's parts that make me think it should belong on ddp daifukkatsu's soundtrack which makes me lol
